Banana Oat Cookies
Many of my cookie recipes are inspired by childhood memories, like these banana oat cookies. My dad grew bananas on the far-north coast of NSW and being poor as church mice the only fruit we ate were bananas. My mum’s treats were always made with bananas, so it’s obvious these tasty morsels evoke early memories of taste and smell.

BANANA OAT COOKIES

Makes 20 small cookies
3 cups rolled oats
½ cup runny peanut butter
2 ripe bananas, mashed
200g 70% dark chocolate, cut into small chunks
OR brazilian nuts, chopped
¼ cup seeds like hempseeds
Mix all the ingredients together, mould a spoonful of the mixture into a ball with your hands and add to a lined baking tray, repeat. Bake in 180’C for 12-15 minutes.
