The blueberry oaties are quickly made weekend treats with few ingredients: a handful of blueberries, organic rolled oats and soft peanut butter. I previously made these cookies with dark chocolate chips, but prefer to use blueberries.

Health benefits:

·       Peanut butter contains potassium as well as protein, which lowers the risk of high blood pressure, stroke and heart disease.

·       It is high in fibre which is for your bowel health, contains healthy fats, magnesium to fortify your bones and muscles, Vitamin E and antioxidants.

BLUEBERRIES OATIES

PB, V, DF, GF, SF

Makes 12 cookies

1 cup runny peanut butter, if not, add 2-3 tbsp plant milk to moisten cookie dough

½ cup date paste, 10 medjool dates soaked in boiling water for 10 mins, drain and mash

½ cup wheat spelt flour or GF flour

½ cup rolled oats

¼ cup hemp seeds

¼ tsp baking powder

200g fresh or frozen blueberries OR dark chocolate chips

Preheat the oven to 180’C. Add the ingredients to a large bowl and mix to a smooth batter. Roll into balls, place on a lined baking tray and press gently with the tines of a fork. Bake for about 12-15 minutes until slightly golden. Remove from the oven and cool on a wire rack.
